Wasabi is an important herbal medicine. It grows in Japan, and recently some cultivation has started in California and New Zealand. The roots of wasabi are edible, it is 4 to 5 inches long and is consumed fresh.

Health Benefits of Wasabi:

1. Cancer Protection. Wasabi is a source of isothiocyanates, this is the same anti cancer chemical found in broccoli and cabbage. The isothiocanyantates seem to activate the enzymes in the liver which detoxify cancer causing substances before they can damage the body.

2. Wasabi also has anti inflammatory effects. Wasabi reduces inflammation associated with diseases like arthritis, and allergic reactions. Wasabi also reduces heart disease and stroke risk. It is thought that Wasabi may reduce the risk of heart attack and stroke by preventing abnormal clot formation.

3. Another health benefit of Wasabi is its anti bacterial effects.

Wasabi’s Culinary uses.

Wasabi does not retain its flavor when cooked; therefore it is generally added to cold food. In Japan, it accompanies most raw fish dishes. Sashimi and Sushi plates always have a tiny mound of grated wasabi or wasabi paste, which is then mixed to individual taste with soy dipping sauce. In sushi it often appears as an ingredient and as a garnish, between raw fish and the vine geared rice.

Wasabi combines well with ginger and soy sauce. It is essential to sashimi and sushi. Wasabi is good with avocado, beef, raw fish rice and sea food.

Wasabi is an expensive herb, and an important herbal medicine.
